Located in the San Román de Hornija valley, the winery cultivates century-old Tinta de Toro vines across diverse plots, each contributing unique characteristics to the wines.

HARVEST

Legado de Orniz harmoniously blends ancient traditions with modern winemaking techniques. The grapes are hand-harvested into small 18-kilogram boxes.

TERROIR & CLIMATE

From the high, stony areas to the lower, sandy terrains, the terroir offers a rich tapestry of flavors. The vines, trained in the traditional goblet style and grown without irrigation, are a testament to the region’s challenging yet rewarding conditions. These resilient vines, deeply rooted in high-quality soils, have endured for generations, providing the foundation for the winery’s exceptional wines.

CINDUS

DESCRIPTION

Origin: Vines grown in the goblet style, aged between 40 and 60 years, in the low, cool areas of the San Román de Hornija Valley with sandy-loam soils.

Harvest: Hand-harvested into small 18-kilogram boxes.

Winemaking: Selection of bunches in the winery. Cold pre-fermentation macerations to preserve its intense red fruits. Skins fermented between 24 and 26 ºC, for 22 to 24 days. Malolactic fermentation takes place in French oak barrels, and then it is integrated during its aging for 6 to 8 months.

Bottling: Bottled unfiltered.

  • Variety: Tinta de Toro (Tempranillo)
  • Alcohol: 15%

Tasting Notes:

  • Visual: Cherry red with attractive violet hues.
  • Olfactory: Fresh with a high concentration of fruit, highlighting the red fruits integrated with the delicate aromas provided by its 6 months in French oak.
  • Taste: Vibrant, with a medium concentration and great expression of ripe and spicy fruit. Medium intensity and persistent in the mouth thanks to its sweet and round tannins.

TRIENS

DESCRIPTION

Origin: Vines trained in the goblet style, aged between 40 and 60 years, in the sunny slopes with sandy-loam soils of the San Román de Hornija Valley.

Harvest: Hand-harvested into small 18-kilogram boxes.

Winemaking: Each bunch is individually selected in the winery, ensuring a perfect maceration and alcoholic fermentation that expresses the full fruit potential of the century-old Tinta de Toro. For a period of 26 to 28 days, we meticulously control the extraction and temperature to achieve the desired aromatic intensity and soften the tannins. Subsequently, for 12 months in French oak barrels, these tannins integrate perfectly, creating our ideal Toro wine.

Bottling: Bottled unfiltered.

Tasting Notes:

  • Visual: Dark red with bluish reflections
  • Olfactory: Intense fruity. Red fruits such as raspberries and cherries stand out, accompanied by delicate floral notes such as violets.
  • Taste: Fresh and vibrant, with a medium concentration and great expression of fruit. Intense, unctuous and persistent in the mouth thanks to its balanced acidity, and its aging in French oak.

EPITAFIO

DESCRIPTION

Origin: Vines trained in the goblet style that are over 100 years old, planted in sandy soils with abundant pebbles.

Harvest: Manual in small boxes of 16 to 18 Kg.

Winemaking: Our hand-selected berries undergo cold maceration for 7 days. A delicate alcoholic fermentation preserves the soft, fresh notes and balances the ripe fruits. Malolactic fermentation in barrels, followed by 12 months of aging in French oak, make our Epitafio a unique Toro wine.

Bottling: Bottled unfiltered.

  • Variety: Tinta de Toro (Tempranillo)
  • Alcohol: 15%

  • Visual: Deep red with blue reflections.
  • Olfactory: Subtle, complex and elegant, with the presence of forest fruits such as blackberries and raspberries. Delicate notes of cocoa and toast define its long-lasting aroma.
  • Taste: Intense and full-bodied, with ripe and sweet tannins that harmonize beautifully with the wood, alongside a burst of freshness on the mid-palate, culminating in a sensation of harmony, balance, and great depth.
